Gravity Haus is looking for a Restaurant Chef De Cuisine for its new location in Steamboat Springs( formerly the Ptarmigan Inn).  Opening this winter, the CDC position will report to hotel General Manager & Director of Culinary for Gravity Haus Inc. You will play a critical role in bringing the restaurant to life this season assisting in menu & recipe development for a new brand.

What You’ll Do: 

  • Oversee all aspects of the Apres, Dinner & Group Dining for Gravity Haus Steamboat

  • Lead the evening culinary team in service including production, prep, special events, purchasing and receiving.

  • Demonstrate superior ingredient knowledge and understanding of culinary trends.

  • Working with the Gravity Haus Director of Culinary, the CDC oversees menu/recipe development and education process to all culinary and service staff

  • Manage on-the-fly requests with ease and poise creating a calm and positive work environment.

  • Be calm under pressure: must have the ability to problem solve, trouble shoot, effectively prioritize work and assignments, and accurately meet deadlines.

  • Cross train team members—evaluate, encourage, and teach team members to improve and widen their kitchen knowledge on each station by creating learning opportunities for future growth. Gravity Haus Value - Keep Growing!

  • Make employment decisions including recruiting, interviewing, hiring, evaluating, and disciplining kitchen personnel as appropriate. Gravity Haus Value - Bring Others Along!

  • Oversee and ensure that restaurant policies on employee performance appraisals are followed and completed on a timely basis.

  • Oversee and ensure that restaurant policies regarding personnel are followed, and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules, and procedures.

  • Use your career experience and talents to help the restaurant reach its financial goals through skillful management of labor cost, food cost, and other controllable costs,

  • Adopt, maintain & execute the Gravity Haus Culinary operations system to ensure successful Back Of Haus operations.

  • Manage inventory: estimate needs, place orders, receive and check deliveries, create order guide processes.

  • Ensure proper food safety in the kitchen, such as temp log completion, product rotation, etc.

  • Review financial information such as sales, costs and labor, to ensure adherence to budgets.

  • Oversee and maintain a safe and clean working kitchen environment. Gravity Haus Value - Leave it Better than You Found It!
