Job Purpose: The Sous Chef is responsible for overseeing the day-to-day culinary operations of the Club in collaboration with the Executive Chef. This includes ensuring the highest quality of food and service for Members and their guests.

The Sous Chef demonstrates leadership every day through coaching and mentoring, organizational skills, and sound business decisions. The Sous Chef is expected to aide in the mentoring and leading of the Back of House department towards continued excellence and always strive for improvement. This position is primarily responsible for operation of the Pool House Restaurant.

Job Summary

Financial:

  • Maintain an acceptable food cost percentage in accordance with budget and sales projections.
  • Adept at recording sales, expenses, and profitability of the operation.
  • Proficient with determining expenses related to business levels in terms of production and labor.
  • Maintains an acceptable labor cost percentage in accordance with budget and sales projections.
  • Accountable for the cleanliness and maintenance of all equipment, counter tops, and shelves.

Culinary:

  • Supports Executive Chef in establishing and maintaining culinary vision with a focus on the more casual dining outlet.
  • Extensive knowledge of varying types of cuisines.
  • Proficient in executing varying kinds of services from a la carte service to buffets, from restaurant to events.
  • Ensure consistency in the preparation of all food items according to Club recipes and standards.
  • Continuously pushes the envelope forward by improving standards of execution.
  • Ensures consistency in execution by creating recipes and systems for team members to follow.
  • Proficient with different methodology of modern-day cooking techniques.

Operations:

  • Understands execution and flow of regular a la carte style dining services for all restaurant and snack outlets.
  • Demonstrates ability to plan and execute banquet or event functions timely and profitably.
  • Creates and follows kitchen policies, procedures, and service standards.
  • Follow all safety and sanitation policies when handling food and beverage.
  • Adapts to member feedback in a constructive manner to satisfy membership needs.
  • Follows all laws relating to labor practices and is responsible for accurate recording of staff's hours.
  • Aides in disciplinary action, promotion, hiring, and termination of staff.

Personnel:

  • Inspire and mentor all team members towards the goal of reaching their full potential.
  • Develop training plans for high performing associates.
  • Conduct routine annual reviews and give guidance to team members relating to their position and professional goals.
  • Demonstrate professional conduct with all colleagues, with the ability to remain calm in stressful situations.
  • Ability to positively impact and collaborate with other department heads and staff.
  • Leads by example when completing job requirements, works with a sense of urgency, consolidates tasks, delegates, and empowers others when doing so.
  • Supports the team in an "hands on" manner as business dictates.

  • Proficient with scheduling and assessing labor needs based on business levels.

 

Qualifications:
  • Experience in Luxury Hotel, Club Kitchens, or Fine Dining Restaurant is a plus.
  • 5-7 years working in a fast-paced kitchen; high volume and fine dining experience preferred.
  • Strong interpersonal and problem-solving abilities. Highly responsible & reliable.
  • Proficient with technology as it pertains to systems with managing operations.
  • Ability to work well under pressure in an ever-changing environment.
  • Ability to work cohesively as part of a team.
  • Ability to focus attention on the needs of Club membership, always remaining calm and courteous.
  • ServSafe Manager Certified and maintained; must be obtained within 3 months of promotion or hiring.
Preferred, but not required:
  • Bilingual (English - Spanish)
  • A.S. in Culinary Arts
  • B.S. in Culinary or Hospitality Management
  • Extensive wine knowledge
  • Association with professional agencies (i.e. ACF, CMAA, etc.)


Physical Requirements and Work Environment: Constant standing and walking throughout shift; up to 16 hours in a day. Frequent lifting and carrying up to 50 lbs.

Work Schedule and Hours: This is a full-time position. Days and hours of work vary based on need. Frequent evening and weekend work is required.

Pay Rate: This is an exempt position ranging from $75,000.00 - $85,000.00 annually. Varies based on experience.
